Happy New Year: My Families Top 3 Meal Prep Dishes – One Pan Only

Happy New Year. After falling of the wagon a little bit on the diet front my wife and I are shifting back to eating more purposefully. Meal prep for us saves time and ensures we are eating right. These sheet pans make clean up easy so we can get to kids bath and bed time sooner.

1 – Sheet Pan Chicken Fajitas

We don’t follow this exact recipe, but it looks like a good one. If I finished a big workout or have one coming up I add some rice. If not, I just stick to big serving of the chicken and veggies.

2 – Sheet Pan Lemon Pepper Salmon and Veggies

We try to eat fish as least once a week. I think mixing protein sources balances out the amount of micronutrients you get throughout the week. Salmon is a good source of Omega 3’s.

This one is a go to when we are tight on time and don’t have any other protein marinating.
